Change from DHCP to static IP

Hi guys - long time no see!

I've a box with debian 3.0 installed on it. So far everything is fine...it goes like hell ;D
Unfortunately I've selected "configure network for dhcp" during installation but now I need to change this to a static IP.

Is this only done with ifconfig? Does the box retain the static IP after the next reboot. Do I have to disable/shut down any dhcp settings?

    Thnx so far!
