for console irc'ing, I prefer 'irssi'
for X irc'ing, I prefer 'X-Chat'

for general linux chat, I like irc.openprojects.net

After KP showed it to me, I do like irssi while I'm in the console and I've always like X-Chat while running X. But, X-Chat can be text based by simply doing xchat-text at a console.
