I am looking to create a SOHO all-in-one box. I am thinking of using a Shuttle "headless" system or using the Linux Xbox way. I want try and make it distro neutral with the following servies, Apache, Squid, DHCP, Iptable, SELinux, NFS, DNS and/or Dynamic DNS as well as allow USB external HDs. I want to have a UI that is Web Based (like the Belkin or Linksys broadband routers). Any ideas of where to start?

I am not sure if you mean "create" as in make your own distro or "create" as in put together a box to handle these features. If you just want to plop in a disc and get most of the things you mention, check these out:

ClarkConnect is based off of Fedora (core 2 i believe) and SME is based off of Red Hat 7.2. Both can run many of the servers you list. ClarkConnect also has the best chance of supporting external USB drives and contains loads of security features.
