There are anitvirus programs that check incoming mail, but that would assume that your mail server is a Linux box. Why not just get a machine that can run a minimal copy of Win2k and a good antivirus product like Norton's, and have it map a drive to your NT server and have it do the scanning?
(yes, it isn't a linux solution, but sometimes you just need to use the best tool for a job). Put a gigabit nic in both the server and the scan machine, have them on their own private network, and you should be good to go.
