There's a program available from SourceForge called PDFedit. It won't convert PDF to another format, but you will be able to alter it. I think Scribus might help as well.
I'm not speaking from experience here, but you might as well try them out and tell us if they work!
You cannot open .pdf documents in OpenOffice. There are Linux tools to edit .pdf documents, however, including a plug-in for Abiword and kde-service-menu tools. My distro also has Pdfedit and Pdftk (Pdf Toolkit). The first, IIRC, is the tool on SourceForge.
