Since you're using gnome, there's a plugin called gkrellm-gnome that let's it occupy all virtual desktops.
I am running RH7.3 with Gnome and enlightenment. I've just started playing with GKrellm and would like the application to occupy all desktops/windows, not show up in the task list area and default to this on bootup.
Is it possible? Where to start?

thank you sir/madam. Exactly what I was looking for!
even if you don't use gkrellm-gnome, you could right click on it and have it sent to all desktops. as far as getting it off the taskbar, i am not sure, maybe play around with having it running in the background.
Goodluck,
