What is the best way to learn assembly language programming for linux?
The books that I see talk a lot about dos.

There are two books that come HIGHLY recommended with Linux and I'll have those up on the site tonight for you. They are a bit pricy, so you might want to stick with the tutorials, but the books give you from A to Z. Especially the book by Richard C. Detmer.
